- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for dusting
- 1 teaspoon pure vanilla extract
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 cups all-purpose flour

- 1/4 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and 1/2 cup of powdered sugar together until light and fluffy, about 3-4 minutes.
- Add in the vanilla extract, lemon zest, and fresh lemon juice, mixing until well combined.
- In a separate bowl, whisk together the flour, salt, and baking soda. Gradually incorporate the dry ingredients into the butter mixture on low speed until the dough comes together.
- Scoop portions of dough and roll into balls about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly.
- Bake for 10-12 minutes, until the edges are set and the bottoms are lightly golden. The centers should remain soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
- Dust with additional powdered sugar before serving.
Notes
For the best flavor, use fresh lemons for both zest and juice. Chill the dough for easier handling if sticky.
