Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and 1/2 cup of powdered sugar together until light and fluffy, about 3-4 minutes.
  3. Add in the vanilla extract, lemon zest, and fresh lemon juice, mixing until well combined.
  4. In a separate bowl, whisk together the flour, salt, and baking soda. Gradually incorporate the dry ingredients into the butter mixture on low speed until the dough comes together.
  5. Scoop portions of dough and roll into balls about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly.
  6. Bake for 10-12 minutes, until the edges are set and the bottoms are lightly golden. The centers should remain soft.
