Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until well combined. Set this mixture aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, to the butter-sugar mixture, beating well after each addition.
  5. Mix in the eggnog, vanilla extract, and rum extract (if using) until the batter is smooth and well combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  7. If using nuts, fold them into the batter at this point.
  8. Pour the batter into the prepared loaf pan, spreading it evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  11. If desired, dust with powdered sugar before slicing and serving.

Notes

Use room temperature ingredients for better mixing. Don’t overmix the batter for a light and fluffy loaf.
