- 1 teaspoon pure vanilla extract

- 1 cup shelled pistachios, coarsely chopped (150 grams)
- 1/2 cup white chocolate chips (90 grams)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Fold in the chopped pistachios and white chocolate chips.
- Drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden and centers look soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For the best results, make sure your butter is softened but not melted. Don’t overbake; the cookies should look soft in the middle when you take them out.
