Delightful mini pot pies featuring a flaky puff pastry crust filled with a rich mixture of mushrooms, onions, and gooey Gruyère cheese.

Ingredients

  • 1 sheet puff pastry
  • 2 cups mushrooms, chopped
  • 1 cup onions, diced
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil and butter over medium heat. Add the onions and cook until caramelized.
  3. Add the mushrooms and cook until tender. Season with salt and pepper.
  4. Roll out the puff pastry and cut into small circles.
  5. In each circle, place a spoonful of the mushroom and onion mixture, and top with a bit of Gruyère cheese.
  6. Fold the pastry over and crimp the edges to seal.
  7. Brush the tops with beaten egg for a golden finish.
  8. Bake for 15-20 minutes or until golden brown.
  9. Serve warm and enjoy!
