- 2 ripe mangos, peeled and diced
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 fresh habanero pepper, seeded and chopped (adjust to taste)
- 1/2 cup honey
- 1/4 cup apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro, for garnish (optional)
Instructions
- Prepare the mangos by peeling and dicing them into small cubes.
- In a medium saucepan over medium heat, add olive oil and then minced garlic. Sauté for about 2 minutes until fragrant.
- Add the chopped habanero pepper and sauté for another 2 minutes.
- Stir in the diced mango and cook for an additional 5 minutes until softened.
- Pour in honey, apple cider vinegar, soy sauce, lime juice, salt, and black pepper. Stir to combine.
- Let the mixture simmer for about 10-15 minutes, stirring occasionally, until it thickens.
- Remove from heat and let cool slightly. Puree the sauce with an immersion blender or regular blender until smooth.
- Taste and adjust seasoning if necessary.
- Cool completely before transferring to a jar or container for storage.
Notes
Store in the refrigerator for up to two weeks. Use a clean spoon to maintain freshness.
