- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh parsley, chopped
- 3 cloves garlic, minced
- 1/2 onion, finely chopped
- 2 large eggs
- 1/4 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup garlic powder (for seasoning on top)
- 1/4 cup additional grated Parmesan cheese (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, mozzarella cheese, parsley, minced garlic, and chopped onion.
- In a separate bowl, whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper until well combined.
- Pour the egg mixture into the bowl with the chicken mixture and gently mix until everything is combined, avoiding overworking the meat.
- Transfer the mixture onto the prepared baking sheet or into the loaf pan, shaping it into a loaf.
- In a small bowl, mix together the garlic powder and the additional 1/4 cup grated Parmesan cheese and sprinkle it over the top of the meatloaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- Let it rest for about 10 minutes before slicing. Serve warm with your favorite sides.
Notes
For extra moisture, feel free to add grated carrots or zucchini to the mixture.
