Ingredients

  • 1 cup diced vegetables (such as bell peppers, spinach, and tomatoes)
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced vegetables and sauté until they are soft.
  4. In a bowl, whisk the egg whites with salt and pepper, then pour over the sautéed vegetables.
  5. Cook for a few minutes until the edges start to set, then sprinkle feta cheese on top.
  6. Transfer the skillet to the oven and bake for 15-20 minutes or until the frittata is set and lightly golden.
  7. Remove from the oven, let cool slightly, and garnish with fresh herbs before slicing and serving.
