- 8 egg whites
- 1 cup diced vegetables (such as bell peppers, spinach, and tomatoes)
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- 1 tablespoon olive oil

Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add the diced vegetables and sauté until they are soft.
- In a bowl, whisk the egg whites with salt and pepper, then pour over the sautéed vegetables.
- Cook for a few minutes until the edges start to set, then sprinkle feta cheese on top.
- Transfer the skillet to the oven and bake for 15-20 minutes or until the frittata is set and lightly golden.
- Remove from the oven, let cool slightly, and garnish with fresh herbs before slicing and serving.
Notes
Best served warm or at room temperature. Can be paired with a side salad.
