A simple and healthy low-carb dish combining chicken, spinach, and mushrooms baked with delicious cheeses.

Ingredients

  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are soft and browned.
  3. Once the mushrooms are cooked, add the chopped spinach to the skillet. Sauté for an additional 2-3 minutes, or until the spinach is wilted. Remove the skillet from heat and set aside.
  4. In a mixing bowl, season the chicken pieces with garlic powder, onion powder, oregano, paprika, salt, and pepper. Mix well to coat the chicken evenly with the spices.
  5. In a large baking dish, spread the seasoned chicken in an even layer. Top with the sautéed spinach and mushrooms.
  6. Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan cheese. If desired, add the red pepper flakes for a bit of heat.
  7. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
  9. Once cooked, remove from the oven and let it cool for a few minutes before serving.

Notes

Make sure not to overcrowd the baking dish for even cooking. You can swap the chicken for turkey or add other veggies like bell peppers.
