  • 4 cloves garlic, minced

  • 1 tablespoon lemon juice
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 cup jasmine rice
  • 2 cups low-sodium chicken broth (for rice)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon olive oil (for rice)

Instructions

  1. Rinse the jasmine rice under cold water until clear. In a medium saucepan, bring 2 cups of low-sodium chicken broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15-20 minutes until the liquid is absorbed and the rice is tender. Fluff with a fork and stir in the grated Parmesan cheese, garlic powder, and 1 tablespoon of olive oil. Set aside and keep warm.
  2. Season the chicken with salt and pepper. In a skillet, heat 3 tablespoons of olive oil over medium-high heat. Add the chicken in a single layer and cook for 5-7 minutes until golden brown. Remove the chicken and set aside.
  3. In the same skillet, add the minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  4. Pour in white wine, scraping brown bits from the skillet, and simmer for 1-2 minutes.
  5. Add lemon juice and 1 cup of chicken broth, then simmer for 3-4 minutes.
  6. Return the chicken to the skillet and stir in the butter until melted and heated through.
  7. Serve over garlic Parmesan rice and garnish with parsley.

Notes

For extra flavor, consider adding vegetables like spinach or bell peppers. Serve with a simple green salad on the side.
