- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 4 cloves garlic, minced

- 1 tablespoon lemon juice
- 1 cup chicken broth
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (for garnish)
- 1 cup jasmine rice
- 2 cups low-sodium chicken broth (for rice)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon garlic powder
- 1 tablespoon olive oil (for rice)
Instructions
- Rinse the jasmine rice under cold water until clear. In a medium saucepan, bring 2 cups of low-sodium chicken broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15-20 minutes until the liquid is absorbed and the rice is tender. Fluff with a fork and stir in the grated Parmesan cheese, garlic powder, and 1 tablespoon of olive oil. Set aside and keep warm.
- Season the chicken with salt and pepper. In a skillet, heat 3 tablespoons of olive oil over medium-high heat. Add the chicken in a single layer and cook for 5-7 minutes until golden brown. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
- Pour in white wine, scraping brown bits from the skillet, and simmer for 1-2 minutes.
- Add lemon juice and 1 cup of chicken broth, then simmer for 3-4 minutes.
- Return the chicken to the skillet and stir in the butter until melted and heated through.
- Serve over garlic Parmesan rice and garnish with parsley.
Notes
For extra flavor, consider adding vegetables like spinach or bell peppers. Serve with a simple green salad on the side.
