- 8 large flour tortillas
- 2 cups cooked shrimp, peeled and deveined
- 1 cup Alfredo sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup frozen spinach, thawed and drained
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cooked shrimp to the skillet and stir to combine. Cook for 2-3 minutes until the shrimp are heated through.
- In a large bowl, combine the shrimp mixture, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, thawed spinach, and Italian seasoning. Mix well and season with salt and pepper to taste.
- Lay a tortilla flat on a clean surface. Spread a generous spoonful of the shrimp mixture in the center of the tortilla. Roll it up tightly from the bottom upwards to enclose the filling. Repeat this process for the remaining tortillas and filling.
- Pour a thin layer of Alfredo sauce into the bottom of a baking dish to prevent sticking. Arrange the rolled tortillas seam-side down in the dish.
- Once all the tortilla roll-ups are in the dish, pour the remaining Alfredo sauce over the top, making sure to cover every roll completely.
- Sprinkle the remaining mozzarella cheese evenly over the sauce.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
For best results, ensure the spinach is well-drained to avoid excess moisture. You can also use different types of cheese or shrimp alternatives.
