Caramelized Onion Pasta with Chilli Oil

A simple yet delicious pasta dish combining the sweetness of caramelized onions with a kick from chilli oil.

Ingredients

  • 400 grams of pasta (spaghetti or fettuccine)
  • 4 medium-sized onions, sliced thinly
  • 4 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)
  • 2-3 tablespoons of chilli oil (adjust to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add sliced onions and salt. Sauté for about 10 minutes until softened.
  3. Add sugar and continue cooking for an additional 15-20 minutes, stirring frequently until onions are golden brown and caramelized.
  4. In the last few minutes, add minced garlic and cook for 1-2 minutes until fragrant.
  5. Reduce heat to low, add drained pasta to the skillet, and toss with onions and garlic. Add reserved pasta water until desired sauce consistency is reached.
  6. Drizzle remaining olive oil and chilli oil over the pasta, season with black pepper, and toss to coat.
  7. Serve warm, garnished with Parmesan cheese and parsley.

Notes

If you have leftovers, store them in an airtight container in the fridge for 2-3 days. Reheat in a skillet over low heat, adding a splash of water or olive oil.
