Ingredients

- 400 grams of pasta (spaghetti or fettuccine)
- 4 medium-sized onions, sliced thinly
- 4 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
- 2-3 tablespoons of chilli oil (adjust to taste)
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add sliced onions and salt. Sauté for about 10 minutes until softened.
- Add sugar and continue cooking for an additional 15-20 minutes, stirring frequently until onions are golden brown and caramelized.
- In the last few minutes, add minced garlic and cook for 1-2 minutes until fragrant.
- Reduce heat to low, add drained pasta to the skillet, and toss with onions and garlic. Add reserved pasta water until desired sauce consistency is reached.
- Drizzle remaining olive oil and chilli oil over the pasta, season with black pepper, and toss to coat.
- Serve warm, garnished with Parmesan cheese and parsley.
Notes
If you have leftovers, store them in an airtight container in the fridge for 2-3 days. Reheat in a skillet over low heat, adding a splash of water or olive oil.
