- 1 pound cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1 cup frozen corn
- 1 cup frozen peas
- 1 small red onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 bag (32 ounces) frozen tater tots
- 1/4 cup sliced green onions (for garnish)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded cooked chicken with BBQ sauce, ensuring the chicken is well coated.
- Add the frozen corn and frozen peas, mixing them evenly.
- Stir in the diced red onion, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Grease a 9×13 inch baking dish with non-stick spray and spread the mixture evenly in the dish.
- Arrange the frozen tater tots on top, covering the mixture completely.
- Sprinkle shredded cheddar cheese over the tater tots.
- Bake for 35-40 minutes until the tater tots are golden brown and the cheese is melted.
- Allow to cool for 5 minutes before serving, garnished with sliced green onions.
Notes
For best results, use fully cooked shredded chicken. Customize with favorite vegetables or proteins as desired.
