  • 1 pound cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 small red onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 bag (32 ounces) frozen tater tots
  • 1/4 cup sliced green onions (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded cooked chicken with BBQ sauce, ensuring the chicken is well coated.
  3. Add the frozen corn and frozen peas, mixing them evenly.
  4. Stir in the diced red onion, garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Grease a 9×13 inch baking dish with non-stick spray and spread the mixture evenly in the dish.
  6. Arrange the frozen tater tots on top, covering the mixture completely.
  7. Sprinkle shredded cheddar cheese over the tater tots.
  8. Bake for 35-40 minutes until the tater tots are golden brown and the cheese is melted.
  9. Allow to cool for 5 minutes before serving, garnished with sliced green onions.

Notes

For best results, use fully cooked shredded chicken. Customize with favorite vegetables or proteins as desired.
